Anything but “Normal”!

In 2021, our son Colton, flew from Hawaii to Utah to be with us for Christmas. We had been eating plant based for several years by then, however, I just wanted to serve something “NORMAL” to the family. Something most people eat the day after Christmas. So, I found these gluten free bagels as well as some plant-based cream cheese. I thought, this is “NORMAL” right? I started explaining to Colton what I was serving and why it was “NORMAL”. Colton asks, “Mom, do you have any more of those delicious avocados?” “Sure!” Continuing down this curious path, he requests the Garden crackers that we had the night before. I find the crackers and bring them to the table along with the avocados. Colton then begins to slice an avocado and place sections neatly on the two bagel halves. He invites in a little salt and pepper to give the avocado a sprinkling. Using poise and dexterity, he carefully begins to “roof” the bagel with the garden crackers. When he was finished, I thought to myself, “Do we put whole crackers on the top of bagels?” THEN I took my first bite!!! I said audibly, “Yes! we definitely put whole crackers on the top of bagels!”! Colton ,absolutely, turned this “NORMAL” bagel into ANYTHING but “NORMAL”!

Instructions

  1. Toast the flaxseed bagels
  2. Spread on the plant-based cream cheese
  3. Peel, pit and slice the avocado
  4. Salt and Pepper the avocado to taste
  5. Arrange avocado slices on each bagel side
  6. Then add your (6) gluten free crackers to finish the bagel.
  7. Enjoy!
